3lbs Beef or Pork Tenderloin
4 TBSP BCOO Wild Rosemary Fused Olive Oil
2 cloves garlic, finely minced
Salt and pepper to taste
Preheat oven to 375 degrees.
Generously rub tenderloin with olive oil and garlic.
Liberally season with salt and pepper (don't be afraid!)
Place tenderloin on roasting pan and roast for 2 hours or until temperature reaches 145 for pork or rare beef or 165 for medium rare.
Tent loosely with tin foil and allow to rest for 10-15 minutes so the juices can reabsorb.
NOTES
As with most of our recipes- you do not have to commit to Rosemary Olive Oil. ANY of our oils would be lovely and it's up to you! Rosemary is a classic pairing as is Herbes de Provence or Roasted Garlic.
We love, love, love serving this super easy roast at all times throughout the year. With beef we make a sauce using horseradish, mayo, Worcestershire, and pepper. The pork is lovely with a creamy dijon mustard and dill sauce.
Quite delicious to make ahead and serve at room temp (beef only).
