Rosemary Roasted Tenderloin

Ingredients

3 lbs beef or pork tenderloin
4 TBSP BCOO Wild Rosemary Fused Olive Oil
2 cloves garlic, finely minced
Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Generously rub tenderloin with olive oil and garlic.
  3. Liberally season with salt and pepper — don’t be afraid!
  4. Place tenderloin on a roasting pan and roast for 2 hours, or until internal temperature reaches 145°F for pork or rare beef, or 165°F for medium.
  5. Tent loosely with foil and allow to rest for 10–15 minutes so the juices can reabsorb.

Notes

As with most of our recipes, you don’t have to commit to Rosemary Olive Oil — any of our oils would be lovely! Rosemary is a classic pairing, as are Herbes de Provence and Roasted Garlic.

We love serving this easy roast year-round. With beef, try a sauce of horseradish, mayo, Worcestershire, and pepper. The pork is lovely with a creamy dijon mustard and dill sauce.
