It is FINALLY strawberry season here and the picking is phenomenal! Our version of salsa combines fresh picked fruit with sweet spiciness for a versatile, season-long dish that will surely please everyone! Serve with lime tortilla or pita chips, with chicken or fish, or try as a delicious Pavlova or panna cotta topper. Works great as a bruschetta too.
INGREDIENTS
- 2 pints fresh strawberries, hulled and chopped
- 1/4 cup purple onion, finely chopped
- 1 yellow bell pepper, diced
- 1 clove garlic, minced
- 1 lime, zested then juiced
- 1 orange, zested
- 4 basil leaves, torn
- 4 TBSP BCOO Sweet Strawberry Aged Balsamic Vinegar
- 8 TBSP BCOO Spicy Green Chili Fused Olive Oil*
- Fresh mint leaves
INSTRUCTIONS
- Prepare fruit and vegetables as noted above in a bowl.
- Combine Sweet Strawberry Aged Balsamic and Green Chili Fused Olive Oil and pour over salsa. Shred mint leaves on top and serve immediately.**
NOTES
*If the Green Chili Fused Olive Oil is too spicy (it’s very hot!), try our Tahitian Lime Fused Olive Oil or Blood Orange Fused Olive Oil for a citrus burst.
**If not serving immediately, place mixture in fridge. Re-mix and pour dressing immediately prior to serving.
