Summer time and the sipping is easy! To say we love peaches would be an understatement. From the moment our neighborhood farm stand starts picking their peaches (just this past week!) we start making plans: peach jam, peach caprese salad, grilled peaches, and yes, peach cocktails! We think you'll find this recipe one that you're going to want to keep in your summer rotation for years to come...

(makes 6 cocktails)
- 1/3 cup peach jam or preserves
- 1/3 cup BCOO Ripe Peach Balsamic Vinegar
- 6 oz vodka
- 1 750ml bottle Prosecco, chilled
- BCOO Genovese Basil Olive Oil for garnish (optional)
- Fresh basil leaves and peach slices for garnish
Instructions
- In a cocktail shaker or quart size mason jar, combine peach jam, Ripe Peach Balsamic and vodka and shake well. Chill until ready to serve
- To serve: Pour mixture into 6 cocktail glasses or mason jars
- Top off each glass with prosecco.
- Garnish each glass with fresh basil leaves, peach slices and a drizzle of Genovese Basil Olive Oil
*Notes: If mixing in mason jar, you can leave ice cubes in, then proceed to add prosecco and garnish. Either way is a refreshing sip!
Before adding basil leaves, "smack" them against your palm to release the essential oils.
We've found this also makes a delicious non-alcoholic mocktail, as well! Just omit the vodka and substitute seltzer water or club soda for the prosecco! (you may want to inncrease the amount of Ripe Peach Balsamic to taste)
