Oven Roasted Tomato Jam

Perfectly ripe tomatoes are oven roasted with olive oil then deglazed with red wine before cooking into this aromatic spread with garlic and herbs. Perfect for topping sandwiches, flatbread, paired with fresh mozzarella cheese or as a compliment to roast pork or turkey.

Note: My personal favorite savory jam. I use this in cocktail sauce, as a marinade with shrimp, chicken and pork and schmear it over boursin with crackers.
