1 French baguette
Minty Pea & Goat Cheese Bruschetta
1½ cups fresh peas
½ cup light-packed fresh mint leaves
3 tbsp BCOO Milanese Gremolata Olive Oil
1 tbsp BCOO Sicilian Lemon White Balsamic
1 cup goat cheese
Sea salt and fresh cracked black pepper to taste
Pulse peas and mint in a food processor until roughly chopped. Stir in olive oil and balsamic. Season with salt and pepper. Spread goat cheese on toasted baguette slices and top with the pea mixture.
